Longganisang Lucban

AND I GUESS I promised a report on the Longganisang Lucban project. Here's the much-delayed picture of my efforts. They look okay in this shot, but the other links were of various sizes. All in all I'd say it was a good first try. I now know the secret to making longganisa--and that's to put in lots of pork fat. Unfortunately, mine didn't have much of this, so when I cooked them, they were on the dry side. Next time, I know better. But since it took me the better part of the morning stuffing the little porkers, I think I'll do this again, uh, next year.
